Development of complex dishes in the fast food format for students aged 18-25 years as an element of the organization of rational balanced nutrition at the University (on the example of Kemerovo state University)

Аннотация: This article describes the importance of proper nutrition, which is necessary for the normal development and functioning of all organs and systems of the body. It also provides a description of harmful fast food and a list of alimentary-dependent diseases caused by its use. The solution to the problem is the development and implementation of healthy fast food in public catering establishments in secondary and higher educational institutions. As a result of the survey, the meals that students need are determined. The description and calculation of macro - and micronutrients contained in the developed dishes for Breakfast and lunch, as well as percentages of daily satisfaction of the body in food substances are given. The cost of dishes is calculated and the economic feasibility of introducing healthy fast food is justified.
