Аннотация: In the article features of functioning of the service enterprises are considered by authors. An attempt to group methods of assessment of the competitive environment in the sphere of service, to prove an algorithm of calculation of level of differentiation of services, to formulate a method of calculation of cost of the enterprise of the sphere of food is made.
